Naveena et al.,(2004) evaluated many proteolytic substances of plant origin and concluded thatcucumis and ginger gave better results to tenderize buffalo meat. Use ofpapain as a proteolytic enzyme and the mechanism by which it increases thetenderness is well established. Papain is a plant protease which acts againstconnective tissue.
They first break up the mucopolysaccharide of the groundsubstance matrix, and then progressively reduce the connective tissue fibers toan amorphous mass. Pawar et al., (2003)used papain and trypsin which resulted in release of amino acids due to proteinhydrolysis in chevon.JackfruitThe jackfruit is a rich source ofphytochemicals, including phenolic compounds, and offers opportunities for thedevelopment of value-added products, such as neutraceutical and foodapplications to enhance health bene?ts (Umesh et al., 2010).
In the studyconducted by Baylan et al., (2016), crude leaf extracts of two plant speciesunder Family Moraceae were tested in 12-day old duck embryo for angiogenicactivity using chorioallantoic membrane (CAM) assay. Approximately 300 g of freshleaves of Artocarpus heterophyllus Lam. (jackfruit) and Artocarpusodoratissimus Blanco (marang) were collected and extracted using 95%ethanol and rotary evaporator. Three concentrations, 100ppm, 200ppm, and300ppm, for the leaf extract were prepared and administered on the test eggs.
After another 48 hours of incubation, the CAM of test eggs were harvested andcollaterals were counted. Results showed that both plant extracts showedantiangiogenic activity indicated by the decrease in the number of collaterals. In the two plant samples, 300ppm of A.
Odoratissimus exhibited thehighest inhibitory effect; this could be attributed to the presence of phenoliccompounds, such as flavonoids, saponins, glycosides, sterols, tannins andanthocyanins.Accordingto Prakash et al., (2009), the Artocarpus heterophyllus fruit hasvarious chemical constituents as several flavones colouring matters, morin, dihydromorin, cynomacurin, artocarpin, isoartocarpin, cyloartocarpin, artocarpesin, oxydihydroartocarpesin, artocarpetin, norartocarpetin, cycloartinone and artocarpanone. The heart wood on analysis yields moisture6.7%, glucosides 38.0%, lipids 0.
7%, albumin 1.7% and cellulose 59.0 %. Theplant also contains free sugar (sucrose), fatty acids, ellagic acid and some essentialAmino acids like Arginine, Cystine, Histidine, Leucine, Lysine, Metheonine,Theonine, Tryptophan etc. .
Bark from 3main trunk contains betullicacid and two new flavone pigments, cycloheterophyllin (C 30 H 30 O 7).Triterpenic compounds like cycloartenyl acetate, cycloartenone are alsoreported. Heterophylol a phenolic compound with novel skeleton wasobtained from Artocarpus heterophyllus. There is only 3.3%tannin in the bark, which is occasionally made into cordage or cloth. Theleaves and stem show the presence of sapogenins, cycloartenone, cycloartenol,?-sitosterol and tannins, they show estrogenic activity. A root contains?-sitosterol, ursolic acid, Betulinic acid and cycloartenone
